Customising vantage, remove reviews, rating system and maps

I am looking for your support to make some changes on the Vantage directory theme I recently bought from AppThemes.
1) I do not need any maps in the whole directory
2) There is a button which say Add a business now and I would like to rename it to Submit a listing now
3) The Vantage theme it comes with rating system and reviews. I would like to disable them.
4) At the top of the theme there are two bars: one which sais: Search for and another one which sais: Near (city, country). I do not need the second one.
5) I would like to remove the Add to favourites option
6) I want to set a limit of words in the overview in the listing page
7) I do not want it to say by whom the listing is added by.

Please note that I do not want the changes to be altered every time I upload the theme.
Could you please let me know how to do this changes. Please, if you mention that a changing in the code has to be done, provide also the coding if possible so as the answer to be useful.
Also bear in mind that I am not an expert neither in wordpress nor in Vantage theme.
