Main Categories, 3 not 2....

2 issues here....
1st
My old website (old install) i have three parent categories going across the main page.
The new install, i cant seem to do this, is there a way I can have categories going across in columns of 3 rather then 2.
2nd
Is that a way to align the catergories for the parents, ive seen this done on some of the showcased sites. Basically, have 3 PARENTS under the next 3 parents etc in the same "line", even if one has an extra sub category or two. Hope you understand?
