    Creating Multiple Store Taxonomies

This question might on the more complex site but here it goes,

I would like to create additional store taxonomies so instead of just having one where I add stores, I would like to modify the theme and add another (ie. stores1) to which I can also add stores.

Please let me know the general steps involved in making these modifications so that I can guide my developer in the right direction. Thanks.
