Country listing + google map zoom level

where can i manage the country-list.
i want to display an alphabetical order.
therefore US should not be displayed at the top, of course.
2.
where can i set the zoom level for google maps?
the default one is to "near" for my needs.
which php-files have to be changed for these two things?
