Remove "What Are You Looking For" in default theme

I would like to remove the fill in text bar that says "What are you looking for?" from the default home page.

I would like to replace it with a 2 line text box.

Also, I'd like to change the text in the drop down menu from: "Categories" to "Choose Your Location"

Can anyone suggest where I should make those changes.

    Thanks
