Editing core files

I'm using a child theme, any files from the root of vantage I want to edit I move to my child theme and that seems to work (style.css, va-home.php, footer.php...).

I wanted to change the title tags on the categories in the top menu, I located this to includes/categories.php - I tried moving the folder and file to my child theme but it doesn't do anything? I I edit the core files the changes I want work.

How do I edit core file in folders using my child theme.
