You would better use a plugin for this, jobroller framework uses the wp_head that can be used by any SEO plugin , like SEO by yoast, install it and you'll be able to edit the mets with ease....

then save the...

Select all the categories to display the field permanently.
I would suggest to activate jobroller and apply the mods on its files , because perhaps you are editing wrong files that they dont make...
