Is there any documentation on how the action & filter hooks work? Or do you use pluggable functions?

I can confirm there is no specific documentation as such, but basically there are plenty of hooks available (it depends on what you want to hook into really), so if you're looking to hook into the theme and extend it, you should be able to find what you need.

The most important one Would be to hook into the filter function. Is there a filter or plugguble funtion available to do this?

There are no hooks in the filter functions, but with a child theme you can override anything if you know what your doing (all files are included using get_template_part).

Is there any plans to document it? I really like the look of the software but I'm worried once I get it I won't be able to customize it to my liking (functionality wise).

We already have plans for an AppThemes Knowledge base (wiki) which would be the perfect place for this kind of information, however at this time we are still working on it, so it may be a little while away at this point.

To clarify, AppThemes does not officially support customizations, so questions/issues regarding such modifications would be subject to community based support.
