Can the map and listings be removed from the homepage and instead display text or all the categories?

The map which appears on the homepage is added in the form of the widget, so you can choose not to use it if you wish. There is no specific option to display the categories in a list in its place, so that would require additional customization on your part. The categories already appear in the menu dropdown fyi. Thanks.

Could you not just change the template of the homepage to the one that displays the list of categories?

That is not a default template option, but you could certainly modify it to suit your needs if you want to. You can find more information about customizing themes here. Thanks.
