Even though there are no ads under the jobs section, the ads themselves will still generally look the same as other ads demo'd, however you can create custom forms and fields which are applicable to the category. You can read more about this and even view a video tutorial on the CP installation page under "How to create custom forms and fields" if you want to see more about how this works..

However, in saying this - there is not currently a standard option to attach other file types (such as cv's), however the question has come up in the forums before if you wanted to search this topic.
Also, the email related features you are looking for are also not standard, so again this would be something you would have to customize.
The ClassiPress theme itself is highly customizable, but if you're looking for every one these features out-of-the-box then they are not all currently available.
