Limit categories from displaying in /blog

Is there a way to limit which blog categories show up in the /blog section? Can you also limit which categories are displayed in the Category menu in the sidebar? I am looking at the demo on http://wpclassipress.com/demo/category/blog/ and would like to limit what is included in the content section along with the menu.

For example I may want to have the announcements category be the only category that displays on the /blog page. Then in the menu I would only want the categories for News, Technology and Travel to be listed and not display the announcements category in the menu.

Is any of this possible?

You don't have to use any categories in the blog if you don't want to.. You can just post everything under blog if you prefer..

Ultimately you can achieve these things if you have the coding knowledge to do so.. The theme is very customizable, so it just comes down to what you know really.. Obviously out-of-the-box they work the way you see them in the demo.
