I thought you were referring to the submit ad page. Anyway, yes you can delete those custom fields and or replace it with your own. Likewise, the description can be move through may require some minor code modification.

Ah, sounds great! Now, just to double check, your "Details" page says that the theme features "HTML tags". Now, does that mean that I can put any kind of HTML into the ad, or am I limited somehow? Could I, for instance, put an [IMG] with a link in there as I plan?

The feature means that in the ClassiPress admin you can select whether or not you wish to allow html in your ads. Of course if you're posting ads from the wp-admin as opposed to the front end, you can post html anyway.
