I am interested in the Jobroller theme but there is one thing that I need to have confirmed. My client has been using a different payment system and does not want to use PayPal.
Does this system allow for employers to post a job and keep it unpublished until the administration approves the post?

Yes you can set the moderation on and all new jobs must be approved first before they're published.
