i see in the demo settings you can pull any number of jobs, what's the difference? do more appear on my site if i pull a larger number, or when making searches in the search bar does the number you have pulled matter, will more appear when you search?

Based on your job queries, you could potentially have a lot of matches, so yes the more you pull, the more will display on your site. Thanks.

Is there any danger in pulling a lot of jobs, would it crash the site or the hsoting server? eg 1 million? What's the max you would recommend to pull

What your site can handle is ultimately dependent on your hosting setup and what WordPress itself can handle, you can find some useful information here.
