Use as a company job site?

We're looking at your jobroller theme (excellent theme by the way). There are a few features/functions that don't really work for how we intend to use the theme so I thought I'd ask the questions and see if this is a suitable solution for us.

We are planning on using for our own company's job website. Where we'd have candidates view listings with our own company. We'd not need the use of job packs or the need to received payment, or some of the features along those lines. Being that we're not php programmers, are the features easy to customize to remove the un-needed 'stuff'? Is this a service you also provide?
