Adding new categories

Hi
I have just spent ages adding new categories to my site (www.secondhandbabystuff.com) and now there seems to be a big hiccup - I went back in to edit a category and the screen only shows the category name and the slug and doesn't let me change which parent category it belongs to. When I try and add a new category I have the same problem - I can only see the category name and slug boxes. Is there a limit to how many categories I can add (I currently have 139 as categories, sub categories and sub sub categories)? Also if this is a problem and I need to start again with them is there anyway I can recover the categories so I don't have to enter them all again?
