help... how to edit links in nav

Hi, I'm still asking newbie questions so thanks for your patience...

I've installed and 3.0.3 my nav bar has adopted additional links. How can I edit the list of links that appear in the header nav and footer nav.

Is it ok to rip out the php and simply hardcode the required links or is this likely to cause problems. If ok, which files contain the structure for these nav positions?

The site is still under construction but what do you think so far.

    Thanks
    Martin
