Profile privacy - hiding product fields and changing display order

QUESTION 1
I ask for a significant quantity of information when people list a product but I don't want everything to show on the public advert. It would suffice to show the city and country the product is in rather than the entire (exact) address.

I understand this might have repercussions on the use of google maps too. But again, I would be fine with the map being centered on the city rather than the street number.

QUESTION 2
How can I change the order in which the custom fields are displayed on the product page?

They don't appear in the same order as the form... and I can't figure out how they are generated.
