Too Many Categories on Home Page

I have a ton of categories and sub categories on my home page. So many that if I don't hide the unused categories, my page layout is either messed up or the last category does not display all of the child / sub categories. For instance, Wineries on my page has about 35 or 40 wineries that I'd like to display. however, only a handful would show up if I included all of them. My temporary workaround is to hide empty categories, however, at some point, I could see all of these categories being needed.

Suggestions on how to fix this? Is there a way to make the page display longer? Or get rid of the "Just Listed" "Most Popular" at the bottom altogether so I have more space?
