Header Menu Modification

Hi, I want to have my own menu's in the header and footer. This is fine for the footer but the header is the problem.

I can go in to the admin and add a custom menu for the header but I dont have the option of having the dropdown categories in it. I suppose this is hard coded in to the theme somewhere.

Is there any way of adding the dropdown categories menu to a custom menu.
