List in generic category automatically

OK so at first I wasn't keen on the Refine Results feature because it only worked on categories, however I've though of neat neat little work around, which worked perfect for me because I have the same submission FORM for all categories.

The solution is to as well as posting the ad into the category that the advertiser selects, to also have it listed in an 'Everything' category. This way when the category 'Everything' is being viewed, ALL ads can be refined allowing a much better functionality of the site.

Now, at the moment I have having to manually add the ads to the additional category 'Everything'.

My question is, can anyone point me in the direction of the code that sets the users choice of category tot he database so that I can hard code this category into the query??
