Removing image upload from custom form

I would love to be able to remove the request to upload images in certain custom forms. I have job postings on my site and it seems silly to ask someone looking for a job to post an image. Having a spot to upload a resume could be cool, but getting rid of the image fields would be nice.

Along with this, being able to set a default picture for all posts in a certain category.
