custom form and fields advice

Hi can some one advise me on the custom forms and fields please...

im curious on how i should really create them, would you say its best i plan thoroughly before making them or can i add or edit custom fields and forms when live.

the reason being is i have created forms before but when i wanted to add something i couldn't do it to the category as it was already used and had to re make the forms again.

i have seen the video and docs on demo page, but hesitating a bit if my site was live. Or if something went wrong when its live with forms etc and although i backed up data base, could i still re do the forms but when redone would it automatically find all the previous posts made.
