Editing wp-config.php file

Hi,

I have my webhosting with Host Gator. Last night I was about to edit the wp-config.php file to add the line for language theme. According to the tutorial I am supposed to use SFTP or SSH but neither one is an option. Host Gator system recommends UTF-8 out of over twenty opions that I can choose from. Should I edit using UTP-8?
