Questions about making a plugin for Jobroller

Is it possible to make a plugin that overrides/extendes some of the functions of the Jobroller theme?

Because I would like to change the way the emails are send, so instead of sending plain text, I want to send HTML emails.

I would also like to make a function that can print PDF invoices.


I could imagine that I use child themes to do that, but I would like to have an direct answer.
