How to modify some of HireBee process without changing Core theme

Hi,
First of all I'd like to say that HireBee is a great theme. I would like like to apologize if my questions sound stupid but I am not a developer myself. That's why I need some help from the community.
So here we go:

1) I would like to change some functionalities in Hirebee without changing the core code as I don't want to have issues with future updates
a. The recruitment process is too complicated. I would like to select proposal & start project immediately without additional accept/decline steps
b. I would like Freelancers can mark categories for email notification of new projects in those categories
What is the best way to do that without touching the code?

2) Is there any release roadmap I can find on this website? I do not want to hire a developer to do some custom work if these feature will be integrated within a few weeks or months.
