Changing field labels and values

Hi,

Can I edit the field labels (i.e. Job Salary to Compensation)? Can I also edit the field values (i.e. 100-200K to commission, base+ commission, flat fee, etc.)?

If so, how exactly can I do it?

I also need to add a header image that occupies the whole top section. How can I do it?

In addition, how can I give the job advertiser the option to enable/disable the apply online button?

You can certainly make modifications to the theme if you wish. These specific changes would require some custom coding on your part, but as I say, it can be done.
