1. is there a "watch list" function for buyers to keep an eye on items they're interested in?
2. can buyers be forced to register before contacting sellers?
3. is the admin privy to emails sent to sellers?
4. can sellers be billed at the end of the sale (%) as opposed to immediate pay?
5. are seller email addresses (contact seller info) alias-ized?

3. Not with the current release (3.0.4), however this is a feature which may become available in a future release via a "bcc" function. It hasn't been confirmed at this stage but you may wish to wait for the release of 3.1 due out in September to see if it is included then.
4. There is a % of sellers ad price payment option, but these are billed prior to the ad being placed.
5. The sellers email address is not visible on the ad, only the contact form is. If a buyer contacts them and they reply to that person, then their address will be visible to the buyer.

4. so in order to bill a seller after a sale you would have to actually set the theme to "free classifieds" and bill the seller manually?

1. If this was something that became a popular feature request, then the development team would certainly consider it for a future release. We have a "feature requests" section of the forums for that purpose, so that members of the community can indicate their interest in any features not yet available ;)

2. Yes, this is something you can set from the ClassiPress admin dashboard.

3. Not at this stage, but would recommend you follow the Appthemes blog as this is the first place where announcements are made.

4. There isn't actually any function to bill a customer after sale, so this would involve customization of the theme on your part.
