Yes, both themes could technically be used for services rather than products, and you can find examples of this in the AppThemes customer showcase (particularly for ClassiPress). If you choose to moderate free ads/listings before they are published then yes you can do this, however paid ads/listings are published immediately. You can certainly also restrict registration to only those accounts you as admin wish to set up manually. Thanks.
