setup a dating-Site?

Hi,
would like to setup a site like a contact or dating-site with the classipress theme.

People can post ads for free
people can read ads, but with hidden contacts.

At the moment they want to contact the poster directly they have to pay or to buy a membership.

From my understanding most of the features are possible already, but not sure about the 'hide the contact' and membership features?

Yes people can post ads for free. You can restrict the sidebar contact form to only registered users if you wish, but there are no specific settings to hide actual fields based on membership. There are no paid options specifically to use the contact form in the sidebar either.

At this time, to achieve the specific options you describe it would involve some customization on your part.
