Change search box text: "What are you looking for?"

Hi,

I would like to change the default search box text "What are you looking for?" to something else...

I have seen this thread here: http://forums.appthemes.com/what-you-looking-20836/

And editing the file: theme-searchbar.php works but there is still a problem...

If you click in the search box and then click out of the search box the default text "What are you looking for?" is displayed again?

What do I need to change so it will always display the text that I change it to?
