Merging Step 1: Category Dropdown Select

I wish to merge step 1 onto one page rather than 2. Right now the user must choose their category first:


..and then click Go to fill out the rest of the info:

How do I move this onto one page so that the user can select their category while filling out the other info?
Here is what I am looking to do:


Also, this may be a simple question but where can I go to remove some of those fields from the listing process? (Price, Street, State, etc.)
