Newly Created/Edited Custom Fields not avail to existing ads?

I have been creating new and editing existing custom fields (adding more options). I believe I touched upon this before but can't seem to find it now. Is there any way the User can go into an existing ad and use the "edit" form to update their ad with the new options?

For example, let's say I had a Form called "Cars". I have 3 fields, Year, Make, Model, and I have 10 ads posted using those custom fields. If I go in and edit that form to add another field called "Number of Doors", and give the option of 2-door and 4-door. How can those original 10 ads get the updated form field without having to be edited by myself in the backend (I know how I can do it by adding the custom value to the meta in the edit screen, but it becomes crazy tedious for the 100's of ads I have posted when people want to enter new info).

Also, I believe this limits the ability to create an ad and go back at a later date to upload a photo.
