Removing State & Country fields

Almost every working example of CP that I've visited displays the 'State' field in the listing process, along with a drop down list of countries.
It just doesn't make any sense!

There are some bizarrely structured websites out there.

I haven't yet seen any working examples using custom taxonomies. Why is this?

It begs the question: is it possible to create groups of custom taxonomies and allow the user to select check boxes for each custom
tag that applies to their listing during the listing creation process?

If not, then why not?

It would unleash some real power in CP and make our websites more useful.
