Serious issues with 3.1.8.

I'm having some serious and constant issues with 3.1.8. at the moment.

Conact-Form-7 (updated)
Statcounter
Exclude Pages from Navigation

Site is currently being used as a food discount card for London, UK..

I have done 99% of the customisation of the site. To be honest didn't take much.


PROBLEM

theme-footer.php - There is something wrong with this file, I don't care what anyone else says, there is something wrong with it. On the left hand side you'll see my "site title" on the right hand side you'll see "Powered by Wordpress etc" ... now all I wanted to do is remove the wording "Powered by Wordpress etc". Now everytime I do, even simply remove a single character I get errors and nothing works.

I checked the forum for an answer but none of these solutions work, to be honest I think 3.1.8. has bugs, 3.1.7 was a lot more stable than this..
