multisite same theme but slightly different headings

Hi,

I want to use a slightly different version of the theme in different sites.

For example say one has the default heading "Business Listings" while the other site might have "Organization Listings"

I see a vantage.pot file but i just would be grateful to get or get access to a blow by blow instructions of what to do. (e.g. change the folder name, change this line in this file etc etc) kinda hold my hand!
