Beginner--- need some clarification

Hello,

I have a couple of questions as i am very new to building sites.

1) We would like to change the suggested search terms in the "search for" box right now it says "e.g. restaurant, web designer, florist" We would like to make them related to our site. Is this possible? Where would i begin? Is there a tutorial somewhere?

2) I am confused about how the multi-language option works. We need our site to be available to customers in English and Spanish at the minimum. We would like to have the option for site visitors to choose their language. Is this possible? IS this what the language packs do? Do i need another plugin? Can someone point me in the right direction.
