Link in category that goes to "Create Listing"

Lets say in my Categories I have:

"Burgers"- Hamburgers
- Chickenburgers
- Salmonburgers
- Venisonburgers

Bubba from Bubba's burger shack comes along and says, "What about alligator burgers?" "They don't have an alligator burger category and I have the best alligator burgers in the country!"

It would be nice if I had:

"Burgers"- Hamburgers
- Chickenburgers
- Salmonburgers
- Venisonburgers
- OTHER...

Bubba could then click "Other" and be taken to the "create listing" page where he could create a listing for Bubba's burger shack complete with an entry for alligator burgers to add to the sub-cats.

How can we do that and make Bubba happy and the world a better place?
