Listing Category as text entry as opposed to checkbox

Hello,

Is it possible to have the "Add Business > Edit Listing Info > Listing Category " area as text boxes opposed to check?

For example Lets assume several cities as well as products. I could not possibly list every conceivable option but would like to give users the option of entering their city(s) and product(s) manually.

Ex.

City 1 - Text box
city 2 - text box
city 3 - text box

product 1 - text box
product 2 - text box
product 3 - text box

I would then manually add these entries as requested.
