Modifying Wordpress Nav Bar

I removed the theme nav bar and would like to use the wordpress as the primary nav bar. I have a couple of questions though regarding this.

1) how do I make the wordpress nav bar show up for users that arn't logged in, so they have the ability to login using the nav bar?
2) how do I remove the wordpress logo, my websites title and drop down, and under the +New how do I remove page from that list?
