Change URL structure

So I give it one last try after I logged in to my Vantage site several times in the last few month but gave up everytime because the link structure doesn't make any sense to me.

I try to explain what I need by giving examples from the Vantage demo site. If there is no way to get this setup it seems like I paid a good amount of money for a theme I can't use at all.

The Demo Site I'm referring to is: http://demos.appthemes.com/vantage/


When I go to a category the URL structure is:

Demo: http://demos.appthemes.com/vantage/l...gory/american/
What I want: http://demos.appthemes.com/vantage/kitchen/american/


When I go to a single listing it looks like that:

Demo: http://demos.appthemes.com/vantage/l...da-pop-heaven/
What I want: http://demos.appthemes.com/vantage/k...da-pop-heaven/


So categories on my example site should look like this:

http://myexamplesite.com/examples/bad-examples/
http://myexamplesite.com/examples/good-examples/


And listings within these categories like this:

http://myexamplesite.com/examples/ba.../bad-example-1
http://myexamplesite.com/examples/ba.../bad-example-2

http://myexamplesite.com/examples/go...good-example-1
http://myexamplesite.com/examples/go...good-example-2

Can anyone tell me if there is any way to get this or if I just have to give up and search for another theme please?
