Help making child theme

Hello

I made the mistake not making a child theme immediatly
now I took the example from the download folder and activated it under themes in the backend
when i activate it everything is grey and the whole footer and social stuff does not appear

So as i have customized the original, I copied the complte folder strukture and took the style.css from the examples folder child theme but i only get errors like :
atal error: Cannot redeclare custom_hide_admin_bar() (previously declared in /var/www/web645/html/1/wp-content/themes/vantage-child/functions.php:289) in /var/www/web645/html/1/wp-content/themes/vantage/functions.php on line 294

what can i do to create a child theme that takes the changes i have made to the original so that when I update the changes in the child theme are left?
Why can i not just copy the whole original to the child theme folder and put in the childs style and activate?

when i change something I have to copy the file to the activated child theme folder?

I think i really have a Problem understanding this 100%
