How to assign email address to listings ?

Nice theme so far

We are not allowing the public to submit listings for now. We'd like to control that.

We will have over 400+ listings and creating a new user for each one seems like A LOT of work. This was mentioned as a solution here in the forum:http://screencast.com/t/RIHWKFPqpm

Is there a way to add the email address right into the listing?

Please let me know how, as we need to be able to do this.
