Just installed Classipress theme and need help with a few things..

this is my first go around with WP. i installed the theme with no problems. but, i need help with the following. I've searched the forum and either i'm missing something or WP is way over my head. because i didn't find anything helpful. for example... it's says to turn off that big appthemes add in the header thru admin. i searched and i cannot find a way to switch it off.

1. how do i change the colors of the theme?
2. how do i turn off the appthemes add on a new install?
3. are there any essential plug-ins that anyone feels I need? i really like the google map plug-in that is on the demo site. where can i get that one and any others?
4. finally, i run a trading company. we get paid for brokering deals between buyer and seller. this site will be used by sellers to post their goods and by buyers to see whats available. but, we cannot have buyers and sellers talking directly or we will not be in business long. is there a way to limit contact between the 2 parties? can i turn off contact this person or hide fields that contain contact info from peoples profiles all together?

thank you in advance and i appreciate any help that you can provide. i love the theme and i think with a few minor tweeks, this theme will be exactly what we need.
