JobRoller Child Theme Settings

I successfully created a child theme for JobRoller, and I would like to be able to modify certain options or add options to the JobRoller Settings pages. The most pressing modification I would like to make is no longer providing the default child themes that came with the theme in the Color Schemes dropdown but rather the schemes available with the child theme.

So in short:

1. I have a working child theme.
2. I want to know the path to be able to modify settings available either through filters/actions/hooks.
3. The most pressing option is Color Schemes, but I'm looking for ideas to be able to modify other settings.
